Mac Mail-Text and background colors

Having moved to Mac 1 year ago from pc, I have still never been able to figure out how to configure background colors for both outgoing
and incoming mail.

Same applies for establishing font colors. I have spent hours trying to figure out from Mac's help to no avail. I have used Thunderbird and it's a snap to configure these items.
Being a Mac man now I thought I should convert to Mail or should I stick with Thunderbird?
